Sure, the Superbowl may be over, and the day of eating an excessive amount of buffalo chicken has passed, yet that doesn't matter to us. In our world, every day is suitable for Buffalo Chicken. Can't you stand behind that belief, too?
Today we want to skip the greasiness though, and make a recipe that satisfies the craving void of the unhealthiness.
That recipe is a healthy, spicy, buffalo chicken bowl. Complete with dressing, kale, and a side of grains.
Are you ready to indulge and not feel gross after? Cue the meal prep. Here's the recipe 411.
What You Need
1 Cup Cooked Quinoa
2 Shredded, Precooked Chicken Breast (Prep beforehand)
1 Cup Kale
Avocado (sliced)
1 Lime -- cut into wedges
4 oz. Cherry Tomatoes, Halved
How To Make
First, prep your chicken -- link above shows you steps on how to shred chicken breast if you don't know.
Next, cook your quinoa. Rinse the grains in a strainer in cold water for 2 minutes. Then, place 1 cup quinoa with 2 cups water over med-high heat in a sauce pan over med-high heat. End result should be fluffy.
While the quinoa is cooking, prep the other ingredients. Cut up the avocado into slices, set aside. Cut the limes into wedges. Half the tomatoes.
After that's done, and the quinoa is cooked, sauté your kale. Add 1 tbsp. of water, 1 tsp. of Olive Oil, salt, pepper into a sauce pan. Throw in the kale. Cook until wilted.
Finally, arrange your bowl! Throw all the ingredients in, and top with bleu cheese dressing. Enjoy!
