Hail the sunshine! Finally, the clouds have let go of their snow spell, and brought with them spring-like weather. Could this finally be the start of spring? Let's keep our fingers crossed. In the meantime, to celebrate the joyousness of warmer weather and sunny vibes, let's make a Peach Cobbler for dessert today.

Okay, so here are the two facts you need to be sold on this peach cobbler: 

  1. It's personal sized, so you can pack it with you and go to the park to snack on it. 
  2. Since it's personal sized, you can rest assured it isn't going to leave you with a feeling of food remorse. 

Convincing, right? It sure convinced us, but, we can't say that we stopped at one serving. Hopefully you will have more will power than us. 

Here's the way to the golden ticket of a recipe for this glorious Friday.

 

Peach Sunrise Cobbler

First gather your ingredients, you'll need the following:

Peaches - 

+ 2 ripe peaches, sliced and peeled

+ 2 Tsp. Honey (you can sub out with brown sugar)

+ 1 Tsp. Cinnamon 

+ 1/2 Tsp. Vanilla Extract

+ 1 Tbsp. Almond Flour (or whole wheat)

 

Crust -  

+ 1/2 Cup Almond Flour, 10 oz (283 g) Bag 

+ 1/2 Tsp. Double Acting Baking Powder 

+ 1/4 Tsp. Baking Soda

+ 2 Tbsp. Manuka Honey, 8 oz. (227 g) Bottle 

+ 2 Tbsp. Unsalted Butter 

+ 1/3 Cup Almond Milk

 

The Steps:

We promise this consume-in-one-bite recipe won't take too long...

Step 1:

First, set your oven to 425. Fill a pot halfway with water, and let come to a boil. 

 

Step 2:

Once the water is boiling, throw in your peaches for about one minute. Then remove from heat. Place the peaches in a ramekin or dish of choice.

 

Step 3:

Add the dry ingredients above for peaches. Place the seasoned peaches into the oven and bake 10 minutes.

 

Step 4:

While the peaches are cooking, mix together the dry crust ingredients in a large bowl. After dry ingredients are added, add in the butter with a fork, it'll be crumbly, that's fine. Then slowly mix in the milk. 

 

Step 5:

Remove the peaches from the oven, set on a heat-safe surface. Then, pour on the wet crust. 

 

Step 6:

Bake for another 15 minutes. Remove once golden. Eat up!
