Today is National Ice Cream Sandwich Day, and to celebrate we've developed a recipe that is sooyummy you're going to want to eat it again and again. But wait...there's a twist, as usual in our posts, this is a healthy ice cream sandwich! Made from homemade vanilla ice cream and mushed between two layers of oatmeal cookies.

The first component to making these Ice Cream Sandwiches is to make the ice cream! We've kept it simple with an easy vanilla recipe.
Very Vanilla Ice Cream
What You'll Need:
+ 2 Cups Milk (of choice)
+ 1/4 Cup Sugar (Sweeter Stevia, an option)
+ 1 tsp Salt
+ 1.5 tsp Vanilla Extract
How To Make:
+ Mix the items together in a bowl
+ Transfer to an ice cream maker! (If you don't have an cream maker, place in cookie molds and freeze)
Not Your Average Oatmeal Cookie
What You'll Need:
+ 2 Cups Rolled Oats
+ 1 Cup Black Raisins
+ 2 very ripe Bananas
How To Make:
To make these oatmeal cookies, all you have to do is simply combine the bananas with the rolled oats and raisins in a bowl.
After, form medium-large size balls with your hands.
Place on parchment paper and press down to flatten them into a cookie shape
Bake on 350 degrees for 10-12 minutes.
Let cool!
