Raise your hand if you're bummed that it's already the middle of August. We're right there with you. While the summer seems like it's spinning out from under us, today being National Creamsicle Day reminds us there's still time to indulge in the weather. After all, there's nothing a creamy citrus treat can't fix, right?
Let's talk a little bit about the history of creamsicles, this way, if you whip the recipe up for some friends you'll look super smart. The creamsicle was invented by none other than an 11 year old named Frank Epperson in 1905. The story goes that he mixed together a fruit-like drink and left it outside one night on a colder-than-normal day. It froze over, and he ate it as you would a modern popsicle. This Frank went on to create the Popsicle Corporation and developed the well-known frozen dessert: The creamsicle.
Though the ice pop version of this classic delight isn't that unhealthy, we decided to bring the healthiest version: a smoothie! What makes this even better than the ice pop is that you can have it for breakfast, which to us, is a win.
