St. Patrick's Day is quickly approaching, are you ready? With endless witty recipes to pin on Pinterest or search on Google, it can get a bit overwhelming to know what to make for your guests. Our solution? These Homemade Green Potato Chips! Made from fresh ingredients, and baked at your convenience, they are sure to be a hit.
First things first, we should warn you, these aren't actually colored green. We didn't want to use food coloring and ruin the all-natural appeal! Instead, we've made a green dipping sauce to compliment the homemade potato chips. The sauce is made with fresh avocados, greek yogurt, and a bit of herbs. Organic and good-for-you, just the kind of luck we want in our food.

Potato Chips Recipe -
Crispy. Salty. Delicious. These chips will have everyone drooling and reaching for more.
+ 4 Large Potatoes
+ Salt and Pepper (to taste)
+ 1 tsp. MCT Oil (Medium Chain Triglycerides)
How to make the chips -
Simply wash the potatoes, and peel the skin (optional -- you can leave on for added crisp)
Then, slice into 1-inch thick circles.
Place in a bowl, and throw in 1 tsp of MCT Oil with salt and pepper. Mix to cover.
Spread out on a baking tray (or two) and bake for 30-40 minutes.
Avocado Dip -
A creamy dip worthy of needing refills.
What You Need -
2/3 cup mashed avocado
1/2 cup nonfat plain Greek yogurt
3 tablespoons nonfat milk
2 teaspoons dried parsley leaf flakes organic
1/2 teaspoon dried dill
1/4 Cup Diced Red Onions
3/4 Tsp. Himalayan Pink Sea Salt
How to make the dip -
Simply mix all the ingredients in a medium-sized bowl with a wooden spoon. Serve.
