Baking is fun and all, but sometimes it just takes too much time. One sure-fire way to get your muffin fix on is with these following super easy mug muffin recipes!
The best part is that these muffins are portion-perfect. As in, one serving won’t leave you feeling bloated, but will leave you full. That is a combination that we’re all for. Plus, there’s so much versatility. If you’re in the mood for a raspberry pineapple muffin (hey, we don’t judge your cravings) you can have it in no time. The base recipe stays basically the same for all the following recipes so let the inner chef inside of you shine!
Chocolate Chip Walnut Muffin
- 1 Egg
- 1/4 cup Almond Flour
- 1 tsp Baking Powder
- 1 Pinch Salt
- 1 tbsp. 100% Organic Ghee
- 2 tbsp. Heavy Cream
- Add Walnuts and Chocolate Chips to preference
- Mix together the egg, baking powder, salt, ghee, and heavy cream.
- Add in the almond flour.
- Blend all together with a spoon.
- Add in chocolate chips and walnuts, stir.
- Microwave on high for 1 minute.
- Enjoy!
Banana Cream Mug Muffin
- 1 Egg
- 1/4 cup Almond Flour
- 1 tsp. Baking Powder
- 1 Pinch Salt
- 1 tbsp. 100% Organic Ghee
- 2 tbsp. Milk
- 3 tbsp. Brown Sugar
- 1 Ripe Mashed Banana
- Mix together the egg, baking powder, salt, ghee, and heavy cream.
- Add in the almond flour and brown sugar.
- Blend all together with a spoon.
- Add in the mashed banana, stir.
- Microwave on high for 1 minute.
